This week we’re exploring the traditional art of making masa through nixtamalization, a method that has been used for thousands of years across Mesoamerica. The process begins by rinsing the corn and cooking it in an alkaline water bath, then letting it rest for 12–24 hours. During this time, the corn undergoes nixtamalization — a natural transformation that unlocks nutrients, enhances flavor, and makes the corn easier to grind. Afterward, the kernels are rinsed once more, carefully dried, and prepared for milling into fresh masa, just as it has been done for generations.

This October, we’re excited to roll out a variety of new products—perfectly timed for fall and the baking season! These offerings come from two new farming partners who practice organic or regenerative farming methods.

In the coming weeks, we’ll be bringing in Bloody Butcher and Ohio Blue Clarage corn, along with spelt wheat, barley, and oats. The oats will be processed into both rolled oats and oat flour. Be sure to stop by either farmers market location to explore these fresh additions as they arrive!

We have been hard at work starting our orchard and berry patch this summer! As of last week we have included apples, peaches, pears, plums, figs, hazelnuts, chestnuts, cherry bushes, gooseberries, elderberries, and raspberries.

This past weekend we made a trip to Illinois to pick up additional cold hardy and unique items for our space…..and it was quite a haul! We picked up kiwi, passion fruit, persimmon, additional figs, paw paws, fall gold raspberries, sea berries, blueberries, honey berries, June berries, white cherry bushes, cranberry bushes, and peanut butter fruit.

This is just the initial phase, as we hope to dedicate a minimum of 2-3 acres towards our orchard and berry patch. Additionally next spring we hope to build a heated greenhouse that can house additional fruits that are less cold tolerant.

We've spent the last two days conducting test batches to reduce carotene oxidation in our semolina flour. Multiple pasta samples containing various combinations of natural enzyme mix, vitamin C, vitamin E, and Beta Carotene have been tested. These ingredients prevent oxidation caused by the Lipoxygenase (LOX) enzyme through different mechanisms.

Pictured is this morning's sample batch, which produced a nice yellow color!

Our orchard is coming along nicely. At this time we have 2 apple varieties (gala and red delicious), peaches, pears, plums, and a fig tree. We’re still hoping to plant some sweet and sour cherry trees.

It was a beautiful weekend! After farmers markets yesterday we spent some time outside and started work on a mobile chicken coop using wood from the barn we have been tearing down.

I’m not a photographer but I’m happy to report we had a successful test and came out with a nice hard dried pasta! We cooked some up this morning and the shape held up nicely and had a great flavor. So much better than “store bought” dried pasta! Our dried pasta has 2 simple ingredients: fresh ground semolina flour using durum wheat from Norby Farms….and water.

Today we began doing testing on the durum wheat. The color of the wheat and flour does have a nice yellow hue. As expected, the flour mills up more looking like corn meal than traditional flour.

In order to test the structure and flavor of the durum wheat, we made a sample pasta using only semolina flour. This made a less smooth pasta but that wasn’t being considered in this original test run. Going forward we will begin testing ratios of the semolina and pastry flours to come up with a pasta recipe that has a good texture, flavor, and structure. Stay tuned!

This has been a huge undertaking but we are very excited to finally be able to offer farm to table semolina flour and pasta! The grain is being sourced from Norby Farms just north of Grenora, North Dakota. They are a small family farm that specialized in growing quality Durum wheat, hard red spring wheat, lentils, and field peas. Did you know our bran flakes cereal only has 4 simple ingredients?

1. Turkey Red Wheat (unbleached flour and bran blend)
2. Local honey
3. Salt
4. Water

We start by mixing our blend of Turkey Red bran and flour. Then in a separate bowl we mix the honey with warm water and just a pinch of salt. The honey acts as a sweetener as well as a binder for the cereal.

From there we slowly add the wet ingredients into the mixing bowl with the dry ingredients until the dough has formed small clumps. Next we run this mixture through our pasta roller to roll the clumps into flakes.

The flakes are placed on a baking sheet and cooked for a little over an hour. Half way through we fluff up the flakes to make sure they are not baking together and cooked evenly. Once they have reached the correct crispiness, they are pulled from the oven to cool and package.

This cereal is a hit in our household and can be enjoyed alone or with some of your favorite fruits.

For those who haven’t baked with einkorn, it is unique because it is a no knead flour. The gluten structure is much weaker than that of modern wheat, so kneading the dough will damage the gluten strands. This characteristic is also what gives it a zero on the gluten index and is easy for people with a gluten intolerance to eat.

Today while picking up more Einkorn wheat, we had the privilege of getting a tour of the farm and processing facility where the Einkorn is grown and packaged. Einkorn is a unique wheat because the hull does not easily come off during harvest when it is ran through the combine. After harvest, they store the wheat until it is purchased. Then, they run it through an initial cleaning and another huller that removes the dark black hull from the wheat berry. From there, the wheat is run through a size and color sorter that removes wheat berries which do not meet their strict standards.

Jon gave us permission to take pictures so our customers could see where the wheat in their flour comes from and what steps are taken to get it ready.

Today while picking up more Einkorn wheat, we had the privilege of getting a tour of the farm and processing facility where the Einkorn is grown and packaged. Einkorn is a unique wheat because the hull does not easily come off during harvest when it is ran through the combine. After harvest, they store the wheat until it is purchased. Then, they run it through an initial cleaning and another huller that removes the dark black hull from the wheat berry. From there, the wheat is run through a size and color sorter that removes wheat berries which do not meet their strict standards.

Jon gave us permission to take pictures so our customers could see where the wheat in their flour comes from and what steps are taken to get it ready.

Here’s your friendly reminder that the first Lenexa Holiday Market is tomorrow from 10-1pm. We will be setup with our flour and baking mixes. The only flour we will not have tomorrow will be our einkorn flour. We ran out of wheat berries and haven’t had a chance to pick up more this week. We will have it available for the December market!

Are you looking to purchase a whole beef?? We have our last beef of the year scheduled for processing on December 12. Our price for a whole beef is only $4.00 per pound based on the hanging weight! The last 2 beef we processed this year had a hanging weight of 640 and 630. This one may be just a little smaller (but it’s hard to tell in the pasture). Estimated hanging weight is probably around 550-600 pounds.

We ask for $1,000 deposit at the time you order the beef, with the remainder due when we deliver your meat. The price includes free delivery in the KC metro. If you are located outside of the metro, there may be a small delivery fee.

In addition to the purchase price of the animal ($4.00/lb hanging weight) you will also be responsible for paying the processing fee to the processor. This typically runs around $0.85 per pound (also based on the hanging weight) for basic processing, plus a $70 disposal fee. Any specialty cuts are extra, but they will discuss with you.

The processor will contact you to go over the cut sheet and you can decide how long you would like to hang the meat before processing. In addition to the meat cuts, you are able to keep all edible organs as well as the bones to make broth.

Recently we have been working with a company out of Manhattan, KS to develop an enzyme mix that can be used to supplement our flours. This mix will offer bakers natural and chemical free option to assist them when they are struggling with rise and oven spring in their breads. Since our flours are all high extraction flours they can be denser than traditional commercial flours.

This picture shows a sample baking of our hard red wheat flour with no enzymes on the right. On the left, you can see there is a significant improvement in gas production. The enzymes work to naturally allow starches in the flour to be broken down so they are more easily digestible by yeast and through fermentation in sourdough. They also help to better align the gluten strands to improve the performance of gluten development.

This enzyme mix will be offered as a side supplement instead of being incorporated into our flours during the milling process. It is important to us to continue to offer our flours as a raw whole grain product, but we want to offer options for our baking community.

At this time, we don’t know when this will be available, but stay tuned!

This is our new bottle calf we picked up last week from another farmer. He was injured shortly after birth and they thought he had a pinched nerve because he can’t get up or walk on his own.

Today at our vet visit we found out he has a damaged back right hip from being stepped on. Because of where the injury is, the vet can’t cast it, so the only possible coarse of treatment is to let him hang in a calf swing for 4 weeks and hope the bone calcifies enough for the hip to stay in the socket. If the treatment works, he has a long road to recovery, but we are doing everything we can to help him out.

We have had a lot of people ask what the protein content of our Einkorn flour is. Today we had it tested by the Missouri Department of Agriculture. The wheat tested an incredible 18.7% protein content! They said they had never seen a wheat sample test that high.
